The 2018 Forks and Knives Red is a blend of Pinot Noir + some Blaufrankisch, Cab Sauv & Cab Franc. Its a wine that falls under 'Essential Nutrition' according to Milan.
Quite carbonic, immensely drinkable. Low viscosity, absent minerality, zero bullshit.
Grapes are hand-harvested and destemmed. The wine is fermented in 2500-liter stainless steel tanks for about 10 days with indigenous yeasts. The skins remain in contact with the juice for about 3 days, for a light and soft extraction and occasional pigeage. Half of the wine stays in tanks and the other half goes into used 225-liter oak barrels for elevage for about 13 months. Moravian Pinot Noir made naturally. Organically farmed grapes, indigenous yeasts fermentation, no filtering and no sulfites added.
Medium-bodied, herbal and stemmy this is a complex red with a bit of the natty funk.
Wine to be smashed along with some food - nothing more, nothing less. Serve thoroughly chilled.
