The Les Hauts de Perry by Mas Des Argunelles has a biodynamic structure, with similarities to Syrah’s from Northern Rhône. Aromas of violets, dried petals and hints of leather with great freshness and depth. This wine is fantastic on it owns, served chilled, or with an elegant charcuterie plate.

This cuvée comes from a very limestone plot from Very fractured Jurassic North / North-West exposure.

This Syrah (70%) and Grenache (15%) vine reaches phenolic maturity at 12 /12.5% flight. The aromatic profile is very close to the Rhône Nord syrahs with its aromas of violets, rose petals, light leather and lots of freshness.

The Mourvèdre which comes into its composition to the tune of about fifteen percent and he located much lower on the southern slope well supplied with water by all the fractured Jurassic limestone plateau.

The harvest is manual, the grapes are destemmed and vatted using elevator belt. Fermentation starts with native yeast. The vatting lasts 30 to 35 days with light pumping over to extract the most delicately possible.

Aging is done in a terracotta jar and in Flextank tank for approximately 2 years.

The wine is bottled without fining or filtration in fruit day and moonlight descending, the only sulfur added, is at this time at 2 g per hectolitre.
