Nicot Rouge is a fruity, easy drinking, medium red. The grapes come from plots with limestone clay soil, facing East + North East. A tasty combination of Grenache (40%) and the Syrah (60%).
The harvest is manual, the vinification takes place on the plot. The grape Whole destemmed for the Syrah and whole bunch for the Grenache. It is put in tank without pump. Once filled, each tank is closed hermetically.
Fermentation starts often or after a few hours in native yeast and without sulfur.
They carry out reassemblies sheltered from the air, the vents are not applied only in case of reduction. Maceration lasts about a month. Aging takes place in concrete vats, and bottling takes place without filtration.
The only sulfur contained in the wine is added to it at this time (2g per hectolitre).
