About the winemaker:
Xavier produces his wine with Chardonnay, Pinot noir or Gamay, on his 6.5 hectares of vines without chemicals. Located where the granite of Beaujolais-Villages gives way to the clay limestones of Beaujolais.
The vinification is done without any addition of exogenous yeast. He likes to extract the complexity of each grape.
