In the heart of northern Burgundy, between Auxerre and Chablis, the Domaine Bersan Jean-Louis et Jean-Christophe perpetuates a wine expertise passed down for generations. Anchored in Saint-Bris-le-Vineux, the Bersan family has been growing vines since the 15th century, in a landscape sculpted by time, on Jurassic soils rich in limestone, marl and clay.
Jean-Christophe, a passionate oenologist, initiated the conversion to organic farming as soon as the estate was taken over. In 2012, the entire vineyard is certified organic wine by ECOCERT. This approach reflects a strong commitment: to produce sincere wines, respectful of nature, the vine and men.
Hand-harvested grapes are gently pressed to extract pure juice. After primary fermentation in tank, a six-month secondary fermentation in bottle (prise de mousse) develops natural effervescence. The wine rests 24–36 months on lees, before disgorgement and final bottling.
A delicate Crémant with pure, expressive aromas. The Pinot Noir provides structure and elegance, while the Gamay adds a subtle, fruity lift. On the palate, it is refined and lively, offering freshness and finesse with fine, persistent bubbles.
