A wine that is the product of not only the most southerly vines of Pinot Noir in the northern hemisphere, but also of the wildest corners of Gabrio’s imagination. Truly a one-off that showcases the almost alchemical winemaking of Gabrio and Giotto Bini.

The almost viking North meets the passionately fiery South when the grape that came from the cold, Pinot Noir, meets the Mediterranean carnal flesh of Sicily’s Pantelleria. Fire and ice meet with 7 months of wild fermentation and skin contact in amphora, no fining, filtration or added SO2.

Impossible yet heavenly equilibrium between charred venison guanciale, white mulberries, saffron-infused cotton candy and lightly candied capers.
