The nose of ripe peach and of citrus, intensifies in the mouth with aeration and shows a generous amplitude. Of a nice length, it ends in a light and delicious bitterness. A table white, to taste on a monkfish and saffron cream.
Planted on soils composed of clay-limestone by place and gravel on the edge of the plot north of the village, vermentino withstands dry periods and draws its freshness in the filtering parts.
Skin contact fermentation for 48 hours, so as to develop the complexity aromatic while preserving the tension. The wine is then aged for five months in tanks before being put in bottle.
