Bourgogne Aligoté "Le Pariot" 2021 | Clément Lavallée

This new domaine impresses us with an ecologically responsible ethos and mouth watering wines perfect for entertaining.

The grapes are coming from a small 0.22ha plot of 35 year old vines from a vineyard named Pariot provides the grapes for this cuvée.

40% of the wine is aged for around 12 months in oak barrels and the remaining in stainless steel tank with natural yeasts. After assemblage the blend remaining in tanks for an additional six months.

Gravity is preferred over pumping and the wines are bottled with no fining and no filtration.

Clément works in a very natural and organic way, although not certified organic these are the methods that he employs in the vineyards.

Young Lavallee farms of 5.5 hectares without relying on chemicals (managaed by Clement and his Sister Caroline).

Not easy work in a region known for persnickety weather.

We're excited to have some of their wine to share, because it's pristine and food friendly.
