These grapes are purchased from a friend who farms organically. Grown on clay and limestone soils. Whole bunch maceration for 14 days, then pressed into barrels. Not fined or filtered. Zero additions except for 20ppm SO2 after malo, and then 10mg/L SO2 before bottling. Aged for 11 months in barrels - 90% used and 10% new. 12.5%

Grapes from organic farming and natural yeast and no added sulfites. Unfined and unfiltered wine.
