The Côteaux Champenois Blanc  by Chavost is a white wine from 100% Chardonnay grapes harvested from clay and limestone terroir with a northern exposure, in 2019 in late ripening. Natural vinification in oak barrels with no added sulphites. Maturation for about 18 months and no filtration before bottling for only 1,182 bottles.

This Côteaux Champenois Blanc is a white wine with very powerful aromas of butter and milk, with notes of lemon, pineapple, and toast. On the palate, it plays on the freshness of very mature Chardonnay, with plenty of vinosity and savoriness, and a very pleasant chalky finish.

 

About the domaine:

The estate named after the historic village of Chavot-Courcourt south of Epernay in the Vallée de la Marne, was established in 1946 by a collective of local winegrowers. Today, over 100 growers uphold the cooperative's values of solidarity, sharing, and a deep connection to their land. With strict internal discipline, they cultivate their individual parcels, spanning more than 70 hectares around the village, aiming to produce distinctive vintage wines for exclusive cuvées.

Chavost is the ancestral name of the village, which formerly was located between the Saint-Martin Church and the Mount Felix hill, upon which a castle was established.

The family have given, strong collective values, solidarity, sharing, and the love of their lands.

Now more than ever, the new generation put all their forces in common to grow high quality grapes, giving them the chance to elaborate unique wines of Champagne.

Their commitment in preserving the environment, the land and the excellence of their wines, is expanding along with a deep conviction. In harmony with their philosophy and values, they decided to produce and launch a new range of wines :
Thanks to a mastered vinification, that does not include added sulfites, the range « Et sans sulfites ajoutés ! » ( meaning « No added sulphites ! »), is composed of a singular and atypical wines. It comes in addition to the traditional range.

Champagne Chavost is characterized by a robust personality, shaped by Fabian Daviaux, the Chef de Caves, who embraces atypical, non-interventionist winemaking techniques.
