I am the Ninja Pet Nat 2021 - Testalonga

Another fresh, crunchy Pet Nat from Craig Hawkins, this time with bright green apples and sourdough notes coming through. Old vines of Chenin, with zippy minerality and a blast of citrus and pear.

Organic Chenin Blanc grapes were hand harvested and fermented with indigenous yeast in stainless steel. Bottled before fermentation finished to create fizz (ancestral method winemaking technique) and disgorged 10 months later. No filtration, fining or added sulphur.
