100% Sauvignon Blanc (skin fermented).
Certified organic fruit from Auntsfield Vineyard, Southern Valleys, Marlborough.
Hand harvested. Fruit was 100% destemmed & underwent wild fermentation on skins & was gently plunged once a day during primary ferment. (Total time spent on skins was 51 days & was then basket pressed into seasoned French oak demi-muid).
The wine was also leess-tirred a few times to retain freshness & add texture. The wine spent 3.5 months in barrel and was then racked into a stainless steel tank to settle for a month before being bottled unfined & unfiltered with no added SO2 or additions of any other kind.
This wine gets better the longer it is opened and in the glass. Serve slightly chilled.
