L'Indigene is a blend of Syrah (60%), Grenache (25%) and Carignan (15%). On the nose it is fleshy with notes of ripe dark berries and briar patch. There is a distinct meatiness that makes you think of salami with garrigue herbs and cracked pepper. On the palate, it is full bodied, textured and robust, with solid acidity and smooth tannins. Fruit notes of blackberry, raspberry and black cherry are concentrated and juicy without being over-ripe. The earthy notes from the nose continue and blend with the savoury notes of lavender, rosemary and white pepper.
Go bold with rich flavour and hearty protein. A venison steak with red wine sauce, or rustic lamb ragú.
The harvest, manual, is vinified in the traditional way. Each plot is vinified in a separate vat. Once destemmed, the grape is placed in a vat using an elevator belt so as to maintain the integrity berries. The tank is then hermetically sealed.
Fermentation starts often or after a few hours always in indigenous yeasts and sulfur free. The vinification is as gentle as possible, simply by infusion of the cap from Marc. Maceration lasts about a month.
Devatting is dictated by the daily tasting. Ageing takes place in concrete vats and earthen jars cooked. Air-tight draws take place during the winter.
The wine is bottled without fining or filtration in fruit day and moonlight descending, the only sulfur added, is at this time at 2 g per hectolitre.
