Blend of 34% Sauvignon Blanc + 33% Chardonnay + 33% Pinot Noir.

fruit from Auntsfield Vineyard & Raupo Vineyard, Southern Valleys, Marlborough.
All the grapes are hand harvested.
This batch was started as a rolling ferment with the majority of the Pinot Noir added first and left on skins for two days before it was pressed off along with the Sauvignon Blanc component into stainless steel tank.
The Chardonnay was the final component added to the batch & was left to go through primary fermentation before being racked into a seasoned French oak puncheon & left in barrel for 5 months.
All ferments were wild & went through partial malo-lactic fermentation (85% malo). Blended with additional Pinot Noir, S/B & Chardonnay from both vineyard sites and left to settle for one month before being given a small addition of SO2, bottled unfined and unfiltered.
Best served chilled.
